[4], xi, 844 pp. 2nd edition illustrated with 25 chromolithographs out of text including the frontispiece and more than 150 figures in the text.
One of the most complete and serious works according to Vicaire who specifies "but it is necessary to have a rather important budget, allocated to the expenses of table, to be able to follow the learned advices of this master of the culinary art". Vicaire, 417-418. Numerous brown spots.
